Lemon curd makes a statement when pared with scones, biscuits, baked goods, cupcakes, or other baked goods. You can find it in larger grocery stores alongside the jams or jellies, but making it from scratch is far superior to store-bought. This recipe is so easy to make and tastes so scrumptious you will want to lick it right off the spoon (don't worry, nobody will judge you if you do!).
4 lemons, zested
1/2 cup lemon juice (3-4 lemons)
1 1/2 cup sugar
1 stick butter, cubed
1/4 tsp. salt
Step 1
Combine all ingredients into a medium saucepan over medium heat.
Step 2
Cook for ten minutes, whisking constantly, until curd is thickened.
Step 3
Remove from heat and transfer to storage jars. Store in refrigerator for up to one week.
